Lo scotch Malt Whisky
Il whisky di malto è universalmente riconosciuto per essere il più complesso, variabile e sofisticato dei distillati; è però preparato con soli tre ingredienti: orzo tostato (malto), acqua e un pizzico di lievito.
Il processo di produzione si svilppa nelle seguenti fasi
Maltazione - l’orzo viene bagnato per iniziare la germinazione. Viene poi essiccato, a volte sopra fumo di torba, per conferirgli un carattere affumicato.
Mashing - L’orzo maltato viene macinato e poi mescolato con acqua tiepida nel ‘mash tun’, per trasformare gli amidi in zucchero fermentabile.
Fermentazione - Il liquido dolciastro (wort) viene scaricato in un grande largo contenitore (washback). Dopo l'aggiunta del lievito inizia la fermentazione che continua per circa 50 ore, per trasformare gli zuccheri in alcol. Il prodotto risultante (wash) è una birra acquosa con contenuto alcolico per volume di circa 8%.
Distillazione - Il wash viene distillato due volte (a volte anche 3) in due distinti alambicchi discontinui in rame (pot still). Solo il cuore della seconda distillazione (spirit) viene tenuto per la maturazione.
Maturazione (botte - cask) - Il whisky viene fatto maturare in botti ex-bourbon o ex-sherry, che devono essere costruite con legno di quercia. La qualità del legno ed il tipo, la frequenza del riempimento nonché il precedente contenuto della botte, hanno un profondo effetto sulla qualità finale ed il suo carattere.
Maturazione (luogo ed età) - Per essere chiamato Scotch, la botte deve invecchiare in Scozia per almeno tre anni, dove il clima locale e le caratteristiche dei magazzini influenzano il whisky.
Con l’invecchiamento, il whisky acquista rotondità e profondità. Invecchiamenti tipici sono 8, 10, 12 o 15 anni. Alcuni possono continuare a maturare anche per 25 o 30 anni.
La Scozia si può suddividere in quattro regioni di produzione: Highland, Islay, Campbeltown e Lowland
E’ importante farsi un'idea di come ogni distilleria riesca ad esprimere il carattere della regione in cui si trova attraverso il proprio malto
Sono proprio queste diversità a rendere ogni Whisky tipico ed unico.
